Beef with peppers and onions in teriyaki sauce

Ingredients:

  • 1 lb (450g) beef sirloin or flank steak (thinly sliced against the grain)
  • 2 tbsp vegetable oil (or another cooking oil)
  • 1 large onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1/4 cup soy sauce
  • 1/4 cup teriyaki sauce
  • 2 tbsp brown sugar or honey
  • 2 garlic cloves (minced)
  • 1 tsp fresh ginger (grated, or 1/2 tsp ground ginger)
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Cooked rice or noodles (for serving)
  • Sliced green onions and sesame seeds (for garnish, optional)

Instructions:

1. Prepare the Beef:

  • In a bowl, combine the sliced beef with 1 tbsp of soy sauce and let it marinate for about 10-15 minutes. This helps tenderize the meat and adds flavor.

2. Cook the Beef:

  • Heat 1 tbsp of vegetable oil in a large skillet or wok over high heat.
  • Add the beef in a single layer and cook for 2-3 minutes per side, or until it is browned but not fully cooked through. Remove the beef from the skillet and set aside.

3. Sauté the Vegetables:

  • In the same skillet, add another tablespoon of oil if needed.
  • Add the sliced onion and bell peppers. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender-crisp.

4. Add Garlic and Ginger:

  • Add the minced garlic and grated ginger to the vegetables. Cook for another minute, until fragrant.

5. Combine Ingredients:

  • Return the beef to the skillet with the vegetables.
  • In a small bowl, mix together the soy sauce, teriyaki sauce, and brown sugar or honey.
  • Pour the sauce mixture over the beef and vegetables.

6. Simmer and Thicken:

  • Stir to coat the beef and vegetables with the sauce.
  • Let it simmer for 3-5 minutes, or until the beef is cooked through and the sauce has thickened slightly. If you want a thicker sauce, stir in the cornstarch mixture and cook for another minute or until the sauce reaches your desired consistency.

7. Serve:

  • Serve the beef and vegetables over cooked rice or noodles.
  • Garnish with sliced green onions and sesame seeds if desired.
